Your site is such a great find and in the vast sea of mediocre recipes with gorgeous photography, I love being able to just exhale and say, “Relax-its a recipe from Food in Jars, it’ll be great.” Good ingredients are expensive and good information and instruction are priceless and I appreciate you having done all the hard work for me so I can simply get to it. The grapefruit-rosemary jam you linked sounds fantastic and I will be making it as soon as I am finished with the batch of your Meyer Lemon Curd I have on the stove. Its 3am here and apparently, I have turned into a vampire. Sadly, not the beautifully coiffed jet setting type but the thick blue rubber band from the celery stalk as a ponytail holder dipping shortbread cookies into a coffee cup full of crazy addictive Meyer Lemon Curd while watching Murder, She Wrote kind. A pretty picture it is not but boy howdy, the snack sure rocks. Second batch in less than 36 hours because its just That good!

All true and they absolutely do! Oh – If I may solicit some extra free advice, do you happen to have a trick for getting rid of the weird brown rusty schmutzy stuff that can sometimes discolor the very last rim on the 1 piece Quattro Stagioni lids? I try not to mess with them too much after processing other than a light wipe out of the canner once they”ve sealed but it still seems to happen sporadically. I know it doesn’t affect the preserve but it looks a bit icky and I am hoping you have a solution?
I sometimes try to clean them with a bit of white vinegar, but it does the job imperfectly. Most of the time, I just pretend it’s not there.
