Marisa, the link for the sweet onion marmalade (“alli-yum”) – the recipe says you can water bath can it, but the pH doesn’t seem high enough for that to be safe, with the oil and the fact that cooked onions aren’t all that acidic. I’m not a master canner like you – what do you think? Thanks!
I would not can that recipe in a boiling water bath canner. But it’s good for the fridge or pressure canner.
