When Food in Jars: Preserving in Small Batches Year Round was published, it contained a number of typos. Many have been corrected in more recent editions (printings seven and higher should be nearly typo-free), but if you have one of the first printings, you might encounter some questionable typos. Here are all the ones that I’ve found or that have been brought to my attention. If you discover one that is not on this list, please do let me know.
Apricot Jam on page 27: Recipe calls to peel apricots, which is incorrect. Apricots never need to be peeled. Additionally, instructions to prepare jars for boiling water bath should read, “Prepare a boiling water bath and 3 regular-mouth…”
Sour Cherry Jam on page 28: Instructions to prepare jars for boiling water bath should read, “Prepare a boiling water bath and 3 regular mouth…”
Peach Jam on page 30: Instructions to prepare jars for boiling water bath should read, “Prepare a boiling water bath and 3 regular mouth…”
Peach-Plum-Ginger Jam on page 31: Instructions to prepare jars for boiling water bath should read, “Prepare a boiling water bath and 3 regular mouth…”
Nectarine-Lime Jam on page 33: Instructions to prepare jars for boiling water bath should read, “Prepare a boiling water bath and 3 regular mouth…” Additionally, the beginning of the second paragraph should read, “Combine the nectarines and sugar…”
Simple Raspberry Jam on page 35: Instructions to prepare jars for boiling water bath should read, “Prepare a boiling water bath and 3 regular mouth…”
Small Batch Mixed Stone Fruit Jam on page 36: The first sentence of the third paragraph should read, “Pour macerated fruit into a medium pot and add lemon zest and juice.”
Nearly Seedless Blackberry Sage Jam on page 37: Instructions to prepare jars for boiling water bath should read, “Prepare a boiling water bath and 3 regular mouth…”
Cantaloupe Jam on page 38: Recipe calls for 1 tablespoon freshly squeezed lemon juice, which is incorrect. This recipe calls 4 tablespoons bottled lemon juice, not fresh.

Gingerly Pickled Beets on page 138: Instructions to prepare jars for boiling water bath should read, “Prepare a boiling water bath and 3 regular mouth…” Instructions to process the jars should read, “…process in a boiling water bath for 30 minutes.”
Pickled Green Tomatoes on page 142: Recipe lists 2 pounds of tomatoes twice; this should be ignored. Instructions to prepare jars for boiling water bath should read, “Prepare a boiling water bath and 3 regular mouth…” Additionally, the first paragraph of instructions says “the process on page 000.” That information, with the correct page number, proceeds the fragment in the previous sentence.
Lemony Pickled Cauliflower on page 144: Instructions to prepare jars for boiling water bath should read, “Prepare a boiling water bath and 3 regular mouth…”
Roasted Corn Salsa on page 154: Approximation of 3 cups of corn from 8 ears is wrong. Don’t worry about the volume measurement, just use the amount that the 8 ears yield.
Canned Orange and Grapefruit Segments on page 183: Page reference in recipe for supreming fruit should read, “see page 78.”
Gingery Canned Seckel Pears on page 186: Page reference in recipe for ginger juice is wrong and should read, “see page 31.”
Blueberries in Syrup on page 193: There is an extra period after the first sentence in the recipe instructions.
Shay’s Chocolate Cake in a Jar on page 215: Parenthetical reference to Dutch process cocoa should read, “ultra Dutch process”
