Chicken, Leek, & Preserved Lemon Pasta + Lagostina Nera Hard Anodized 5 Quart Casserole Giveaway

It’s become popular in recent years to keep a gratitude journal. Often no more than a simple notebook, this practice allows one to list and enumerate the many things for which they feel grateful. I’ve often considered adopting this habit, but have never quite managed to commit to that kind of journaling (sometimes it’s all I can do to keep up this website).

However, I have much that for which I am grateful. And if I were to start making lists, near the top would be my gratitude for my dinner making abilities. It might sound silly, but I am grateful that it’s something I have both the means and the skills to do without a whole lot of heartache or struggle.

Throughout my adult life, I’ve picked up an assortment of know-how related to making dinner. How to make soup. How to roast vegetables. How to toast grains in a little bit of butter before adding water to increase their deliciousness. And how to make a one-pot pasta dish.

I’ve made a number of these pasta dishes over the years (here’s a memorably delicious one) and their original inspiration is always the single skillet pasta recipe from Martha Stewart that took the internet by storm a several years back. This one takes a bit longer than the Martha version, but most of the time is hands off, so it still manages to feel blessedly simple.

This particular one-pan pasta dish features a whole bunch of leeks, braised boneless, skinless chicken thighs, baby spinach, creme fraiche (for creaminess), and several tablespoons of diced preserved lemon peel (about three-quarters of a small preserved lemon).

The resulting meal is hearty, bright, and really comforting. It reminds me of the casseroles of my childhood, only without a can of cream of mushroom soup.

I made this dish this weekend particularly to feature the Lagostina Nera Hard Anodized 5 Quart Casserole. A few months back, a rep from Lagostina emailed and invited me to participate a promotion/giveaway to show off the goodness that is this pan.

Baked Penne, Broccoli, and Ricotta + Lagostina Martellata Pasta Set Giveaway

A tasty pasta dish and a fabulous Lagostina Pasta Pot giveaway! Best National Pasta Day ever!

Happy National Pasta Day, friends! In honor of today’s holiday, I have a fabulous giveaway from the nice folks at Lagostina (you might remember them from this post last December, when I gave away this snazzy Risotto Pan).

I’ve had the one pictured above in my kitchen for about a month now, and I can’t say enough good things about it. It’s functional, conducts heat beautifully, and may well be the most beautiful piece of cookware in my kitchen.

I’ve used it for all manner of blanching, steaming, and cooking by now (it also happens to work well as a canning pot for half pint jars!) and have taken to leaving it on the stove between uses, because I so enjoy seeing it there in all its gleaming glory.

The recipe I’m sharing with you today puts this pot to work twice. First, I use it to blanch off a bunch of chopped broccoli. Once it’s cooked, I use the same water to cook the whole wheat penne.

While the broccoli cooks, I browned some chicken sausage in a little olive oil and then drained it on a plate. Once the broccoli is bright green and tender, it gets drained and poured into the pan where the sausage had cooked.

From there, it’s a matter of building a sauce of pressed garlic and ricotta cheese. I wrap it up by adding the cooked sausage back in, along with the pasta, a healthy splash of pasta water, and a generous handful of grated parmesan cheese.

I love having a petite pasta pot like this one in my kitchen, because it allows me to stay at the stove, rather than dripping water between the sink and the stove. I’ve long had a larger pasta pot, but rarely pulled it out because it was just too much for my regular weeknight cooking. This one is just so much more functional for my household.

Baked Penne, Broccoli, and Ricotta

Yield: serves 4-6

Ingredients

  • 1 pound broccoli florets and stems, chopped
  • 1 tablespoon olive oil
  • 1/2 pound chicken sausage
  • 12 ounces short whole wheat pasta
  • 1 cup ricotta cheese
  • 2 garlic cloves, pressed or minced
  • 3/4 cup grated parmesan cheese

Instructions

  1. Fill a pasta pot with water and bring it to a boil. Once it boils, salt the water well and add the broccoli. Cook for 3-4 minutes, until it turns a vivid green.
  2. Meanwhile, heat the olive oil in a large pan or skillet over medium-high heat. Remove the chicken sausage from its casing and brown in the pan, using a spatula to break it up into crumbles. Once it is brown, use a slotted spoon and transfer the cooked pasta onto a paper towel-lined plate.
  3. Tumble the cooked broccoli into the pan that had once held the sausage and reduce the heat to medium. Bring the water in the pasta pot back to a boil and add the pasta.
  4. Add the garlic to the broccoli, along with the ricotta cheese and the drained sausage. Stir to combine.
  5. When the pasta is finished cooking, drain it and pour it into the pan with the other ingredients. Stir to combine and add 1/2 cup of grated parmesan cheese, along with 1/2 cup of pasta cooking water.
  6. Season with salt and pepper, and add more pasta water, if it is too thick.
  7. Top with the remaining parmesan cheese. Slide the pan under the broiler to brown the top.

I have a weakness for beautiful cookware (some woman collect jewelry, I surround myself pots and pans). The first time I saw the Lagostina Risotto Pot at my local Williams-Sonoma, I nearly swooned. Gleaming tri-ply stainless steel! A wooden topped lid (that fits tightly and doubles as a trivet)! And a thick, heat diffusing base to prevent hot spots and burning!

To my very great delight, not long after spotting this gorgeous pot for the first time, I got an email asking if I might like one to use for the development of a risotto recipe. I sent a positive response off as quickly as my fingers could type.

Since this lovely piece of cookware arrived, I’ve been making a lot of risotto. It’s one of my favorite things to make and eat on chilly days. I love the ceremony of near-constant cooking (though to be truthful, I often put the spoon down for a moment or two so that I can do a little clean-up while I cook) and the comfort that comes when you cozy up to a bowlful.

Whenever I make risotto, my primary goal is to cram as much vegetable content into the pot. Risotto can be a heavy dish, and so making sure that it’s packed with fresh produce (in this case, aromatics, greens, and roasted squash) helps lighten it and make it a more regular dinnertime occurrence.

When I make this for me (if I’m making if for Scott, I use roasted carrots in place of squash), I peel and chop all the squash and stir it into the rice. However, if I have friends coming by, I like to reserve some of the roasted squash to serve on top. It brings a little visual and textural interest to the plate and makes it feel like something you might be served as the neighborhood Italian place.

What’s nice about this piece of cookware is that truly, it’s good for so much more than risotto. The wide base and low profile mean that it’s a great shape for any dish you want to simmer and reduce. It does good work with small batches of jam and I love using to make Marcella’s tomato sauce.
